Wine Making Notes

The Shiraz grapes for this wine were harvested from a few different vineyards in the Margaret River region. Each batch was picked at optimum ripeness and colour density. The perfect growing conditions into late February which allowed the fruit to retain its purity. The fruit was picked in late March, harvested in the cool mornings, crushed and destemmed into stainless steel fermenters and inoculated with a selected yeast strain. The wine was matured predominately in French oak for 12 months. After maturation, the wine was blended, fined and bottled. 


Nose

Displays a bouquet of florals, dark cherries, dark plums and fruit cake spices. 


Palate

This is a juicy, fruity wine of rich dark cherries, red and dark plums, black pepper spice and complemented by the savoury elements from oak maturation. 


Allergens

Fined with the aid of egg and milk products, traces may remain. 


Food Pairing

A beef stew with a touch of smokey spice, spicy sausage or smoked brisket.
