Wine Making Notes

The fruit was harvested and processed on a cool autumn morning. The juice was barrel fermented in a combination of new and old French oak barriques with a small portion fermented in stainless steel. Fermentation was conducted using selected, aromatic yeast strains at temperatures between 12 to 22°C. Post fermentation barrels received regular battonage to enhance mouth feel. After maturation in oak the wine was blended, lightly fined then filtered and bottled. 


Nose

This wine exhibits beautiful white stone fruits of peach and nectarine, complemented with oak flavours of cashew and hints of vanilla. 


Palate

The palate has a creamy texture of white peach and nectarine, with melon, cashews, hints of spice all complemented by the balanced acidity to provide a fresh, vibrant and complex wine. 


Allergens

Fined with the aid of milk products, traces may remain. 


Food Pairing

Marinated BBQ chicken skewers or wild mushroom risotto.
