Winemaking notes:

The fruit is sourced from a vineyard located in close proximity to Willyabrup. With a high percentage of Mendoza clone the grapes were harvested at night to ensure fruit retained cool temperatures upon delivery to the winery. A portion of the blend was handpicked in the cool hours of the morning. The majority of the juice was barrel fermented in a combination of new and old French oak barriques whilst a small portion was fermented in stainless steel. Fermentation was conducted with high solids and aromatic yeast strains at temperatures between 12 and 15°C. Post fermentation barrels received regular battonage for a period of time to enhance mouth feel.

Appearance:

Medium straw with green tinges

Nose:

Lifted aromas of ripe white peaches, nectarines and honeydew melons with a hint of vanillin oak.

Palate:

The palate is bursting with lifted fruit characters of white peach, nectarine and honeydew melon with a vanillin undertone from the well-integrated oak. The palate finishes with a lingering lemon acidity freshness.

Food Pairing:

Seared scallops or salmon served with crunchy Asian greens.
